Parker Farmers Market Sweet Corn Salsa Recipe
Posted by: | CommentsOlathe Sweet Corn Salsa – Recipe & Directions

After visiting your local Parker or Highlands Ranch Farmers Market you should be able to have all of the ingredients for a fabulous Grilled Corn Salsa with a little California twist.
Visit your local farmers Market this week and purchase:
- 6 ears of Olathe Sweet Corn,
- 2 Poblano Peppers,
- 1 Jalapeno or Anaheim Pepper (optional)
- 1 bunch of cilantro (optional)
- 1 red pepper (optional)
- 1 red onion
- 1 Tbsp local honey
- Juice of one fresh lime juice
- 2 avocado’s (optional)
- Salt and pepper to taste
Directions
- Turn your grill on to medium to preheat.
- Leave the husks on the corn and soak them in water. Remove the silks but leave the husks on. The water trapped inside the husks steams the sweet corn for the most amazing results. . it’s ok if they look burned.. it will be fabulous! Grill on medium heat for 15 to 20 minutes.
- Place your peppers on the grill for 15 minutes or until they are blistered. Take them off the grill and immediately put them in a plastic bag. This makes it much easier to take the outside skins off. After a few minutes in the bag, peel the skins off, pull off the stem and the inside membranes and chop.
- Chop the red onion and cilantro finely.
- Shuck the cooled corn and hold either on the top of a bunt pan like the video shows or with a smaller bowl inverted into a bigger bowl and slice the kernels off of the corn cob.
- Into the bowl of corn, combine all of the ingredients of choice above. If you love avocado chop it in the skin into cubes and add at the last minute so it keeps its shape.
- Spread tortilla chips on a baking sheet and heat at 400 for 3 minutes. Even if your chips are a little stale this will make them taste fresh, crispy and hot.
- You can even eat this with a spoon it’s so wonderful.
- To round out your meal brush olive oil and season salt and pepper your protein of choice and grill it after you take the corn and peppers off.
See the video of how to cut the corn off of the cob easily here.

Two Mexican restaurants bite the dust in Parker CO
Posted by: | CommentsBamba’s Mexican Restaurant and Moyotes Restaurant.
Parker CO has seen many restaurants come and go throughout this economic downturn and two more have joined that long list.
Bamba’s Mexican Restaurant which moved into the Shari’s Restaurant Building several years ago closed it’s doors a few days ago and Moyote’s Restaurant which served a unique blend of Mexican and Hawaiian food are both now closed. The Bamba’s space has a “For Lease” sign up and Moyote’s spot has been re-leased to a new New York Pizzaria. Parker could use a great pizza place so we will all have to just wait and see what they’ll have to offer.
Going to Bamba’s was like visiting a large friendly family who would quickly learn your name and had one of the BEST Margarita’s in Parker if you asked for a special one. Moyote’s never got a liquor license which hurt their popularity with the folks who like to have a Marg or a Corona with their enchiladas. Moyote’s was also family owned and operated and Moy and his family will be missed by the regulars.
Please let these closures remind residents to support the locally owned restaurants and other small businesses in Parker so they don’t follow in the footsteps of these two.

Wine Walks in Olde Town Parker Colorado
Posted by: | CommentsBack by popular demand, The Parker Downtown Development Council (DDC) has launched the 2010 season of Old Town Wine Walks.
The Old Town Wine Walks are similar to a progressive dinner, only instead of meals, Parker neighbors and friends move from business to business to sample different types of wine. While sampling, people are encouraged to talk to the owners and see what each unique business has to offer with the favorite haunts even serving finger foods like cheese, crackers and chocolate to pair with the wine.
Each participant receives a map of Historic Old Town Parker which shows each Wine Walk ‘Stop’, a commemorative tasting wine glass to keep,
15 tokens to trade for 15 wine samples, and special offers to local businesses. Cost is $10 per person. Fun in downtown Parker? Priceless.
Each event will have different businesses participating and different wines to sample so come on down to Mainstreet and meet and greet your neighbors on the last Friday and Saturday of each month May through October.
Time: 5 p.m. to 8 p.m.
Dates: July 30th & 31st, August 20th & 21st, September 24th & 25th, and October 29th & 30th.
The Parker DDC is a non-profit organization whose purpose is to increase the quality of Parker’s historic downtown area. They accomplish this by bringing local businesses, landowners, and the Town of Parker together to provide a more enjoyable, vibrant, and viable downtown for the Parker citizens, community, and businesses.
